Keep scrolling and we'll build a bowl of phở bò from the bottom up, the way it's put together in our kitchen.

Layer 1 · Nước dùng

The brothHours on the stove before the first bowl goes out.

Beef bones, charred onion and ginger, star anise, cinnamon and clove, simmered low and skimmed until it runs clear and amber. Everything else sits on this.

Layer 2 · Bánh phở

The noodlesFlat rice noodles, blanched to order.

Soft, slippery and just firm enough to pick up a spoonful of broth. Prefer it without soup? Order the phở khô: dry-tossed noodles with the broth on the side.

Layer 3 · Bò

The beefSliced thin, generous on top.

Rare slices that cook pink in the hot broth at the table, with tender brisket underneath. People mention the portion size in reviews more than anything else.

Layer 4 · Rau thơm

The herbsTorn by you, not by us.

Thai basil, mint, bean sprouts, lime and fresh chilli come on their own plate, so you can make the last layer exactly how you like it.
